Sweet and crunchy
A new recipe for a new year: No Bake Mealworm Cookies
I got this recipe from an earnest green sweater wearing, Dutch grad student. He told me all about his experiments with mealworms and grasshoppers but never got around to telling me his name. The cookies are surprisingly tasty, not too sweet and satisfyingly crunchy.
Combine and melt (boil 1-2 minutes):
1/2 cup butter
2 cups sugar
1/2 cup milk
Remove chocolate mixture from heat then add the following:
1 cup peanut butter
1 tsp vanilla
1 cup mealworms*
2 cups oatmeal
Cover countertop or cookie sheets with waxed paper.
Use two tablespoons to form dough balls. Drop the dough onto the waiting waxed paper, let rest until cooled and set, about 50 minutes.
Makes about 2 dozen cookies.
*You can get mealworms more cheaply elsewhere but if you like fancy tins with French labels you can purchase BBQ or wasabi flavored mealworms here.
