From Au coin Belge, a temporary stall under the RER tracks (Bd Auguste-Blanqui). These gaufres were slightly sweet, crispy with caramelized sugar on the outside and a warm almost gooey interior.
From a market stall in Arras. These ones ended up thin and crisp. Once cool they were spread with rum butter and made into little sandwich cookies about an inch and a half in diameter.
